Date Energy Balls with Almonds


1 1/2 cups oat flour, or ground oats

1 cup creamy peanut butter, or other nut butter (or sunbutter)

1/2 cup maple syrup or honey

6 Tablespoons no sugar added strawberry jam

Shaved almonds, chopped (optional)


1. Add oat flour, nut butter, and maple syrup into a large bowl. Stir and combine well

2. Roll a spoonful of the mixture into a ball

3. Create a space for the filling, by flattening out the center of the ball with your thumb

4. Add a 1/2 teaspoon of jam in the center of each ball and gently mold the peanut butter mixture to close the ball

5. Repeat the above steps with the remaining dough and jam. This recipe makes 10-12 balls

6. If desired, roll balls in shaved almonds

7. Refrigerate the balls for 30 min to allow them to firm up

**Energy balls can be refrigerated in an airtight container for up to 10 days, or freeze for up to 2 months.
